This video clip mentions the dance to be set to Chempata talam.
Can someone please provide more details about this talam.
Are there any CM kritis set to this talam?

I hope you are aware of "chenda melam". In short, "chenda" is a percussion instrument mainly found in Kerala. "Chenda Melam" is an orchestra of chendas - so to speak.
In chenda melam, chempata is an 8 beat cycle (like adi talam). Since the video clip link that you sent is of mohiniyattam, which is also Kerala based, I am guessing that this is adi talam. [Haven't watched the video yet]

Re: Chempata talam
Hari is right. chempata is almost same to Adi talam except for the ' kriya '. It is a Kerala talam and is used in kathakali , taayampaka(chendamelam) etc. In Kerala sangeetam talas are known by different names compared to their Carnatic music counterparts such as:atantha-Khanta jaati ata,muRiyatantha-mishra chaappu, chempa(or champa)-mishra jaati jhampa,chmpata-aadi,panchaari-rUpakam etc.
